3 ingredient pancakes - no eggs or flour
3 ingredient pancakes
Bananas, Oats and Milk. That’s it. You want to make your 3 ingredient pancakes VEGAN? Then just use a nut milk, like almond or even oat milk. You want to make your 3 ingredient pancakes gluten free? Then use gluten free oats.
There are one or two other ingredients you need like oil for frying and a pinch of baking powder, but I’m assuming you have these in your pantry or larder. A bit of cinnamon adds to taste if you like it and for those with a sweeter tooth, drizzle on a bit of good quality maple syrup and or some açai.
3 Ingredient Pancakes
- bananas 1 and a 1/2
Ripe but not overly ripe, I used medium size bananas.
- Oats 60 grams
So that's 3/4 cup or 1/2 cup of oats per banana. I used quick cooking oats from Mornflake as I had them in my cupboard, add a teaspoon of fibre if you like. I like Fibreful.
- milk 180 mls
So that's 1/4 cup per banana. I used Koita Organic Lactose Free milk, use what you like, or try with laban and a little water.
- Pinch of baking powder
You can also add a little cinnamon if you like and or a teaspoon of brown sugar.
- Little oil to fry
I use grapeseed oil
How to Make
- Making the batter
Whiz all above up NOT THE OIL, in a Nutribullet or blender
- Frying the pancakes
Take a tiny bowl or your 1/4 cup measuring scoop of the mixture and pour carefully into a preheated frying pan with a little oil spread over the base
- top tips please note
WAIT till you see little bubbles then carefully flip till golden brown. A LOW HEAT is best so be patient. CUT UP greaseproof paper into squares and use to separate each pancake. DON’T WAIT to fry once you’ve made the mixture as the oats will thicken it up a bit
