Bread without yeast
It’s hard to find yeast in some cities right now, so here’s an easy, tasty recipe for making bread without yeast. I’ve researched quite a few recipes and spoken to a few bakers as I wanted an authentic, easy recipe that was relatively healthy and didn’t have too many ingredients. So ultimately we based our recipe on Darina Allen’s Irish Soda Bread recipe.
I’ve used a small quantity here that will make a good bread for 3 or 4 people maximum for a day. I didn’t want to waste ingredients, it’s easy to do and so good having something fresh. But you can adjust the quantities as you need to.
- All purpose flour 65 grams
You can use a bread flour, or any white flour you have to hand, I don't think self raising is a good option.
- spelt flour 65 grams
I've tried to keep the bread as healthy as possible and used spelt as it has a lower gyceimic index than other flours, but you don't compromise on taste. You can use what you have.
- Bicarbonate of Soda 1/2 TSP
This is what makes the bread rise
- Salt 1/2 tsp
You can also add a little turmeric if you like, or even cinnamon.
- Laban or any kind of buttermilk 110 ml
It's easy for us here in Dubai to get laban, try and use buttermilk or a plain yoghurt that's not too thick, add some water to it.
How to Make
- MIxing the flours
Simply mix your flours together and add the salt and bicarbonate of soda. MIx well again with your hands so the salt and soda are well distributed.
- Adding the liquid
Add your liquid and draw up the flour into a dough but don't knead this bread. It will just take a couple of minutes.
- Baking your bread
Simply lift the bread out of the bowl and lay on a baking sheet and put in the hot oven. you may want to do a cross shape across the bread before you put it in the oven, easier to break into pieces afterwards. But it's not essential
- how long in the oven
Bake for about 15 minutes at 200 degrees, then reduce heat for another 15 minutes to 175. Check your bread is ready by knocking it to see if it sounds hollow. No need to wait till it cools too much to eat!
