Roasted Cauliflower with Tzatziki

Have together or just eat the tzatziki on it’s own! Easy, very nutritious, has a Middle Eastern twist with the fresh zaatar and of course makes a perfect vegetarian main course.
Ingredients for Tzatziki
- local cucumbers
3 to 4 local (that's the small ones for us in Dubai)
- Good greek yoghurt
The thicker the better for this recipe, about 400 grams is good, see how you like it.
1/2 to 1 teaspoon of fresh finely chopped garlic. Do a batch and store in your fridge, so useful for many dishes. The ready made paste doesn't taste the same.
- fresh zaatar
It's really easy for us to get fresh zaatar leaves here in Dubai, if you can get them, use about 2 handfuls. Mostly the leaves, not the hard stalky bits. Use 1 to 2 teaspoons of the zaatar powder mix if you cannot get fresh leaves.
- salt and pepper
To your taste, but at least 1/4 to 1/2 teaspoon of salt
- spring onions
small handful of chopped spring onions.
- ROUGHLY CRUSHED UNSALTED PEANUTS TO GARNISH
FOR THE ROASTED CAULIFLOWER
Simply break into florets and toss in a mix of salt, pepper, olive oil, turmeric and a little chilli if you like. I suggest about 1/4 tsp of all the spices and about 2 to 3 tablespoons of olive oil.
