Hitchens Kitchens is a recently set up (January 2018) all round culinary offering headed by professional and accomplished chef James Hitchens. I first met him when he was head chef at JB’s Gastro pub in JBR. More recently he will be found cooking on super yachts moored in Dubai!
What’s on offer at Hitchens Kitchens
James can offer a full catering service for up to 30 people at your home. You can choose the menu with him. Or he can teach you some tricks of the trade and help you prepare for a dinner party. If you like he can teach you one course or a whole meal either on a one to one basis or for a group of friends. This is a great idea for a special birthday party at home or any foodie occasion.
What did we experience from Hitchens Kitchens
James taught us how to make an impressive starter and then proceeded to cook our main course and dessert. He then served us the same in a very elegant way.
We experienced this with 6 foodie friends, some of whom were vegetarian. James will adapt any menu to suit the dietary requirements of your guests.
What did we learn to cook
We learned how to prepare an Asian salad with tuna or tempura vegetables. This was a fun activity where we all participated and learnt the fine art of cutting salad vegetables in a very professional way! We also learnt how important it was to refresh and crisp up our vegetables till just before serving. James showed us how to sear tuna and make tempura batter.
What did we eat for our main courses
We opted to relax and chat and then allowed James to continue cooking the rest of our meal in my kitchen, but I regret not learning how to cook the excellent butternut squash risotto I had for my main course! The non-vegetarians enjoyed chicken with Lyonnaise potatoes and some charred sweet corn puree and brocolini on the side. For dessert we had a classic, comforting dish of lemon posset that was creamy, delicious and impressive at the same time! I really liked the way the creaminess was juxtaposed with the tartness of the passion fruit puree and the buttery short bread biscuits were perfect too!

James is very generous with his food portions, you won’t go hungry at all!
Who does the clearing up?
James brings his very efficient assistant with him who discreetly clears everything up and your kitchen is left sparkling.
Do they do the dinner party set up
They do some of the set up, so James can provide the crockery plates for all your courses, we added our own flowers and glass ware.
Do the meals include wine
No you provide your own drinks, but James does provide some tasty nibbles if you’re watching a lesson.
