These healthy spring rolls look hard to make, but I promise you they are not! I watched 3 or 4 different you tube videos and put all the good bits into one, informative video showing you how to make these healthy spring rolls.

Ingredients
- rice paper pancakes
I used Blue Dragon but you could also use Thai Choice or any other brand you can find. They look the same. Keep your packet flat when you store, else they will break, as they are brittle.
- Crunchy vegetables cut into matchsticks
Use anything you like, carrots, white radish, red peppers, cucumber. You can also add some avocado, not too soft and some sesame seeds.
- Green herbs and leaves
Mint, coriander, baby spinach, rocket, all washed and dried, roughly chopped
- Your favourite dipping sauce or make your own
Try sesame oil, chilli flakes, lime juice, soya sauce, rice wine vinegar, little grapeseed oil.

NOTE It’s really easy to make a dipping sauce based on the ingredients you have. Keep soya sauce, chilli flakes and a little sesame oil in your store cupboard.
Add Fish Sauce if you’re ok with that. The above together with some fresh lemon or lime juice can see you through most sauce and marinade needs!
