Cauliflower Bread recipe
We have added some cumin, garlic and turmeric to our cauliflower bread recipe that’s gluten free, light on the stomach and wholesome to eat. Don’t over process your ingredients if you want a rustic, artisan tasting and looking bread. Some people call me a Recipe Disruptor!ย

Ingredients
- fresh Cauliflower
that weighs about 500 grams or so, in florets
- almond meal
60 grams or 3/4 of a cup of almond meal, doesn't have to be too fine
- garlic
One teaspoon of fresh finely chopped garlic. Do a batch and store in your fridge, so useful for many dishes. The ready made paste doesn't taste the same.
- cumin seeds or powder
One teaspoon of cumin seeds ground to a powder or just use ready cumin powder
- turmeric
1 teaspoon of turmeric powder.
- salt
Just under 1 teaspoon of any salt, not rock salt though.
- eggs
3 medium eggs, SEPARATED
- parmesan cheese
About 30 to 40 grams finely ground like breadcrumbs
- melted butter
About 30 grams
- baking powder
1 heaped teaspoon, use gluen free baking powder if you're strict on the gluten free
- thyme leaves - optional
2 teaspoons fresh
- sesame seeds - optional
about 3 teaspoons for the topping
How to Make
- Process the cauliflower into a fine breadcrumb type texture
easy in a thermomix
- add spices and mix again
- Mix in the almond meal to the cauliflower
- whisk egg whites to soft peaks and mix yolks in a separate bowl
- slowly mix the yolks and half egg whites to the spiced caulilfower mixture.
Then add the parmesan cheese, melted butter and baking powder
- then fold in the remaining egg whites
- transfer whole mixture to an overn proof dish
top with sesame seeds and BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 25 MINUTES
NOTE really great to toast up in an air fryer if you have one! Top with feta cheese and crunchy radish slices, makes a great vegetarian light meal for any time of day!ย

NOTE It’s really easy to make a dipping sauce based on the ingredients you have. Keep soya sauce, chilli flakes and a little sesame oil in your store cupboard. Add Fish sauce if you’re ok with that. The above together with some fresh lemon or lime juice can see you through most sauce and marinade needs!ย
