AIR FRYER AUBERGINES

Air Fryer Aubergines Oriental or Indian style
Air Fryer aubergines are a great dish to prepare this way. Why? Because aubergines or egg plants are sponges for oil, this way you use very little oil but the marinade means no compromising on umami flavours.
It’s also much quicker to cook them like this.
I’m describing oriental style here as we’ve done this many times before. Indian is also possible. Come back to a later post to find out about that. The marinade is very versatile and you can use it for many dishes. It’s also vegetarian and vegan too.
I use a Ninja AF100 Air Fryer. See link below. It roasts and dehydrates as well as air fries!

INGREDIENTS Oriental Style
2 medium aubergines, or one large, “fat” one!
Oil for spraying, try getting olive oil or rapeseed spray oil
MARINADE
red miso paste one teaspoon
sesame oil 1 teaspoon per aubergine
red chilli flakes 1/2 a teaspoon or more if you like it fiery!
mirin 1 teaspoon per aubergine
rice wine vinegar 1 teaspoon per aubergine
grapeseed oil 1 tablespoon

HOW TO MAKE IT
Cut the stalky bits off the aubergines
Chop up each half aubergine lengthways, then chop each long half into about 6 to 8 pieces
Toss the aubergine chunks into the premade marinade
leave for about 30 mins if you have time
spray the base of air fryer plate twice with oil spray
Heat up the air fryer to 190 degrees C for 3 minutes on Air Fry setting
When done, add your aubergines at 190 degrees for about 5 minutes on Air Fry setting
Toss after 5 minutes, set at same temp and time for another 5 to 7 minutes or so, check and if golden brown and soft then they are ready!
