Easy Chocolate Mousse
We have added some rose water, coffee and made a simple blend of local dried Arabic floral herbs and nuts. This gives the easy chocolate mousse a restaurant feel and makes it perfect for a ramadan recipe.

RECIPE WILL BE SUITABLE FOR THERMOMIX METHOD AND FOR NON THERMOMIX USERS TOO.

Ingredients
- CHOCOLATE
2 bars of Lindt = 200 grams. Use the type of chocolate you prefer.
- EGGS
4 medium eggs, room temperature separated into yolks and whites.
- MILK
1/4 cup of milk, I used low fat lactose free, but I think any will be ok so that's about 60 grams
- sugar
60 to 65 grams of sugar I used white, any will be ok.
- FRESH COFFEE
1/2 teaspoon of coffee grounds to add to the sugar AND a double shot of made up espresso cooled to add to the chocolate mixture
- salt
Just a pinch of salt to add to the egg whites
- rosewater
1 to 1.5 tablespoons
- few unsalted pistachios
About 3 to 4 grams crushed
- some dried floral herbs
about 7 to 10 grams in total for decoration. The ready dried floral zouhtar mix is ideal. Easy to get from Union Co Op in Dubai or try an Arabian supermarket where you live. This topping is optional though
How to Make
- Process the coffee and the sugar till powdery
easy in a thermomix and takes 10 seconds on speed 10.
- ADD THE CHOCOLATE IN ROUGH PIECES and then add the milk
warm through gently till melted and mixed well. 4 mins 50 degrees speed 2 in the thermomix
- then add egg yolks coffee shot and rosewater
mix through. 15 seconds speed 4 in the thermomix
- Then whisk egg whites with salt till stiff peaks are formed
If in the thermomix then take out chocolate mixtures, clean and dry your bowl use settings 3 min speed 3.5 with butterfly whisk.
- then carefully fold in the egg whites to chocolate mixture
Don't beat out all the air but ensure egg whites and chocolate mixture is well blended.
- Pour mousse mix into 8 to 10 small Moroccan tea glasses or shot glasses or little coffee cups
You can decorate with a mix of whizzed up dried floral hrebs like Zhoutar and pistachios at this point. Totally optional or a couple of fresh rose petals if you have them!

NOTE It’s really easy to make a dipping sauce based on the ingredients you have. Keep soya sauce, chilli flakes and a little sesame oil in your store cupboard. Add Fish sauce if you’re ok with that. The above together with some fresh lemon or lime juice can see you through most sauce and marinade needs!
